Banana pancakes for breakfast

Surfed for a paleo recipe, my bananas and eggs version was not quite filling enough. Found this one from www.myfitfamily.com.

Ingredients
2 ripe bananas
3 eggs
1/2 tsp cinnamon powder
2 tbsp coconut flour
2 tbsp honey
1/2 tsp vanilla essence
And oil for the pan (i used coconut)

The results were firmer and more filling then my 2-ingredient original version.

  1. Sandy, do u know whether we can just replace plain flour with coconut flour? Ie one for one..

  2. Hi Glory, yes you can but at half ratio. Need to try and adjust. Coconut flour tend to expand. So instead of 1/2 cup of flour, 1 put bout 1 tbsp. :-) Happy experimenting!
